When cut in half, the cross sections of these wheels are shaped like boomerangs. The curds are hand-pressed in cheesecloth. Then the edges of the cloth are knotted up and the cheese is set on top of it, resulting in a big indentation on the underside of the finished wheel. A rough, natural rind develops that is mottled brown and gray. The paste is earthy and smooth carrying its goaty qualities through to the sweet toffee finish.
